I made these yesterday for Valentine's Day for Peter because he loves Peanut Butter and Chocolate. The recipe said "Chocolate Peanut Butter cupcakes." The banana part wasn't part of my original plan but surprisingly tasty in the end.
In honor of Valentine's Day and my boy Elvis, we decided to name it "Big ol' Hunk of Love" instead of "Fat Elvis."
I had planned to make chocolate hearts with red decorations to put on the top but I pooped out at the end and just opted for some sprinkles instead.
I recommend using crunchy peanut butter to give a little something extra. You also have the choice of making your frosting gooey like mine or more spreadable, it's up to you.

Big 'ol Hunk of Love cupcakes
Original recipe from "The Joy of Vegan Baking"
Makes 20-24 regular sized cupcakes
You will need:
for the cupcakes:
1/2 cup crunchy peanut butter
1 1/4 cups non dairy milk (soy works best but I used rice and it came out fine)
1 ripe banana, mashed (leave chunks if you like or mash it completely
1 tsp vanilla extract
2 1/4 cups all purpose flour
1 1/2 cups sugar
3 1/2 tsp baking powder
1 tsp salt
3 tablespoons unsweetened cocoa powder
two cupcake trays + cupcake liners
for the frosting:
1/2 cup peanut butter
1/3 cup unsweetened cocoa powder
1/2 cup non dairy milk (+ a little extra in case the frosting is too thick)
2 1/2 cups powdered sugar, sifted
1/4 tsp salt
1 tsp vanilla extract
Preaheat oven to 350*F
Using a mixer, mix together peanut butter, milk, banana and vanilla
combine flour, sugar, baking powder, salt and cocoa in seperate bowl and stir well
slowly add the dry ingredients to the wet, mixing just until combined
fill cupcakes 2/3 full
bake 20-25 minutes until a toothpick comes out clean
cool completely before frosting
Cream together the peanut butter and cocoa
add the milk and continue mixing until smooth
add the powdered sugar, salt, and vanilla, mix until combined and no lumps
add additional milk or powdered sugar for desired consistency
Spread over completely cooled cupcakes
enjoy!
